Fruity Granola
Homemade granola is simple, with simple wholesome ingredients. Change up the flavour using different Saunders jams combined with oats, dried fruits, nuts and seeds.
Makes: about 3-4 cups
- 1/2 cup Saunders Jam – Raspberry, Strawberry, Peach, Saskatoon, Strawberry Rhubard
- 2 Tbsp honey
- 1/4 cup canola oil or coconut oil
- 3 cups Old Fashioned oats
- ½-3/4 cup combination of dried fruit (raisins, chopped apricots, apples, coconut, banana chips),
- Chopped nuts and seeds (almonds, hazelnuts, cashews, pecans, pumpkin, sunflower).
- In a small saucepan whisk jam, honey and oil and heat just until bubbly, remove from heat.
- In a large bowl, combine oats and preferred add ins.
- Pour warmed jam mixture over and stir to cover.
- Lightly oil a rimmed baking tray or shallow roasting pan.
- Bake in a 350 oven for 20 minutes, stirring occassionally, until lightly toasted.
- Watch carefully. Reduce heat if needed.
- Cool and store in airtight container.
