Peanut Butter Thumbprints
Saunders has the “jam” to hold up in this easy, everyday treat, our favourite is raspberry!
Makes: 24 cookies
- 1 cup pure peanut butter (no sugar added)
- 1 cup brown sugar
- 1 egg
- ½ cup Saunders Raspberry Jam
- In a mixing bowl whisk together peanut butter, sugar and egg until a firm dough.
- Preheat oven to 350F.
- Roll dough into 20-22, 1- inch balls. Place on an ungreased cookie sheet.
- Bake 6 minutes. No more, the dough should be soft, and slightly puffed up. Check after 5 minutes.
- Immediately with a gloved thumb or top of a large wooden spoon handle indent middle of each cookie.
- Let cool.
- With a small teaspoon, fill indentation.
- Store in a sealed container with a layer of parchment between cookies.
