Peanut Butter Thumbprints

Saunders has the “jam” to hold up in this easy, everyday treat, our favourite is raspberry!

Makes: 24 cookies


  • 1 cup     pure peanut butter (no sugar added)
  • 1 cup     brown sugar
  • 1            egg
  • ½ cup    Saunders Raspberry Jam

 

  1. In a mixing bowl whisk together peanut butter, sugar and egg until a firm dough.
  2. Preheat oven to 350F.
  3. Roll dough into 20-22, 1- inch balls. Place on an ungreased cookie sheet.
  4. Bake 6 minutes.  No more, the dough should be soft, and slightly puffed up.  Check after 5 minutes.
  5. Immediately with a gloved thumb or top of a large wooden spoon handle indent middle of each cookie.
  6. Let cool.
  7. With a small teaspoon, fill indentation.
  8. Store in a sealed container with a layer of parchment between cookies.
