Sweet Popover
A Yorkshire Pudding for fruit and jam, an impressive but so, so easy breakfast, brunch or dessert.
Makes: 4 -6 servings
- ½ cup all purpose flour
- ½ cup milk
- 2 eggs
- 2 Tbsp sugar
- 1 tsp vanilla extract
- ½ tsp salt
- 2 Tbsp butter
- ½ cup Saunders Jam of choice
- 1 cup Whipped cream or full fat yogurt or creamy cheese such as Labneh
- In a blender or food processor whir flour, milk, eggs, sugar, vanilla, salt until smooth and creamy.
- Let sit for 20 minutes to “develop”.
- Preheat oven to 425F.
- Add butter to a 9 or 10 inch oven proof skillet. Place in oven to melt butter. Swirl to distribute.
- Pour batter into skillet and gently swirl to cover bottom.
- Bake for 20-25 mins. (do not peek for the first 15 mins!)
- When done, pancake with be puffed and golden brown around the edges.
- Top with dollops of cream and preferred Saunders Jam.
- Serve immediately.
